Why do soup dumplings leak?

Common causes include a weak wrapper center, warm filling, overfilling, or a loose seal. Change one variable at a time so the cause is easier to identify.

How thin should the wrapper be?

Keep the edge thinner than the center so it can pleat while the middle still supports the soup. Rest the dough, then roll from the center outward instead of flattening the whole disc evenly.

Does the soup gel need to stay cold?

Keep the soup gel chilled and portionable until you start folding. Warm filling becomes stickier and puts more stress on the wrapper during pleating.
